- In a separate container, mix the coconut flour and baking powder
- Add the flour and mix until there are no lumps
- Divide into muffin tins and bake for 25 minutes or until golden brown
- Remove from the oven and leave to cool. You can freeze them for 30 minutes to prevent them from falling apart.

- Put all the frosting ingredients in a blender and pulverize until smooth. Spoon the mixture over the chilled cupcakes and sprinkle with dried coconut if you like.

- 2 cans of coconut milk, 14 oz each
